A huge, huge thank you to you and your team for everything over the few days that we were in Byron.From the mezze at the welcome drinks to all of the food at the wedding… everything was beyond expectation.Your food was a delight to consume – both literally and visually. Ben and I also really loved the reception shared dining, it was all just incredible, so fresh and flavoursome and beautifully presented, and completely flipped the stereotype of traditional wedding catering on its head.Mostly though, thank you for being so relaxed and helpful throughout it all. No matter how ’simple’ we had wanted the wedding to be, planning it was such a mission. To work with companies like Seaweed who were so calm and helpful in this process made everything so much easier.Your team was so great also, please pass our thanks to everyone. We had a fantastic wedding and a massive thanks to you Mon and the rest of the Seaweed Crew. The food was beyond anything we could have ever imagined. It has definitely been the talk of town.
I also wanted to say that the whole lead up to the Wedding was very personal, we were so well looked after & found it all very pleasant.

Who was your caterer and why did you choose them?
Monique Guterres and her wonderfully team at Seaweed Cuisine catered our wedding to absolute perfection. Immediately after the reception, a selection of canapes were served on the lawn alongside a rustic antipasto table brimming with local cheeses, cured meats and homemade dips. For the reception, we feasted on a three course meal served family-style with dishes including local Bangalow Pork, Tasmanian tarator trout and Vinno Cotto beef sirloin. Guests enjoyed full bar service throughout the day and night.
Our signature cocktails were an apple cinammon martini and bitter peach bellini. In terms of wine, we chose a pinot grigio and pinot noir to match the array of flavours in the meal. We also had a champagne tower which we filled with our favourite Italian prosecco and served or the toast. For supper, we served woodfired pizzas and espresso martinis.

We don’t know where to start? We are so blown away how your whole team were on the same page as all of us. Every single guest made some report back to us about how wonderful your food & staff are.
Your company actually created a vibe that we have never experienced at any event we have ever attended. There was a feeling that each staff member really cared + were all happy.. You could tell you are all a very close knit team that runs like clock work..
All the consulting Pre Wedding was also a positive & every dealing was so informative & stressfree.
The drinks package was divine & expresso martini and finger lime vodka drink was a huge hit..
We can’t thank you enough & you have set the bench mark to all that attended, we feel so blessed & a great start to marriage.

Can not speak highly enough of Jake – and neither can the guests.
The people with special requirements raved about the attention to detail and felt they were very well catered to. Maggie the one of the waitress’s was outstanding (and funny).
The whole evening just went so well and better than we could have imagined.
Ps. The duck pancakes were talk of the town! And the scallops and prawns…oh and the blue eye cod.
Ok EVERYTHING was off the chain amazing!

Mon!!! We just got back from our honeymoon I’ve been dying to call you and tell you how amazingly talented you and your team are! Absolutely everything was incredible and beyond my expectations. I wanted to take all of your staff home with me, they were always smiling, always happy to help and made everyone feel so welcome plus they were so efficient and looked gorgeous! Your food was to die for!!!!!!!! And everyone commented on how delicious the food was plus so many people I spoke to said that it was the first wedding they’ve ever been to and not left hungry and couldn’t get over the quality and taste of the food and how beautifully it was all presented – so well bloody done!!!!!! I am so happy I could have you apart of our special day and will definitely be booking you again when we come back and stay. You are truly such a lovely, talented women Monique you have a beautiful gift and have created such a perfect catering company with perfect staff. I can’t thankyou enough. I just wanted to say a huge thank you personally, on behalf of Spelly and myself for your generous and gorgeous contributions on Friday. In fact I don’t think i can really express our gratitude in an email!!The food, the service, the attention to detail, the aesthetic, everything was amazing. There is no doubt in my mind you (and your team) are definitely the best at what you do!I just received this email from Mel about how it was dealing with you and your team – i think it says it all!Mon was always available for a chat on the phone to nut out any finer points and her and her team helped greatly on the day. Her floor manager and I ended up speaking a secret sign language from across the party for most of the day and he was ‘on’ from the moment he arrived. Her Grom team were great when I asked for help in moving things like the glass wear to set up the tables etc the jumped to attention (I was also very wet and looked like a crazy person so this may have been why haha) The whole team was so inconspicuous and respectful. Never before have a I seen a delighted fly swatter stand at a platter table and shoo flys like that team did. Above and beyond and the produce was amazing. Spelly and I couldn’t stop thanking your staff during the day – they were so polite, and professional. I just can’t speak more highly of them. And who’s your team leader he’s a legend?! I went up to them after the event and thanked them but i may have just looked drunk and silly, pls pass on my thanks again to them all!The day wouldn’t have been the same without your generosity and I hope that the tags on insta and upcoming imagery through blog post etc come close to making it all worth your while!

Dear Mon, We just returned from a lovely few week’s honeymoon and we are now ‘back to reality’. We look on our wedding day as so very special and absolutely perfect. Thank you for being a part of it and for doing your part to make it so special. The food at the reception was fantastic! It was delicious and exactly what we wanted, and more. I’m so sad to never be tasting the same food again – The best meat I have every had! We also had an overwhelmingly positive response from all our guests. Hey mon! We just got back tonight!! Was meaning to email you the following day but the week just got away from us! Monique, your staff were incredible! That’s all we can say. Each one of them went above and beyond!! All of our guests kept coming up to beau and I throughout the day and night and were telling us how amazing the food was and how beautiful your staff were… They even went out of their way to bring us canapes during photos and wanted to make sure that beau and I were looked after. Truly, they were all fantastic. They made our night that much more special and we’ll never forget it. Please pass on our thanks and appreciation to them all. They were all such beautiful people.
